Oatmeal peanut butter bars

Better than store bought and so easy to prepare. These homemade bars are a good source of fiber, protein, and potassium. Perfect for breakfast, lunch boxes, or on-the-go snack.

Ingredients:

3 medium ripened bananas, mashed

2 cups rolled oats

1 cup of natural peanut butter

1/4 cup of mini chocolate chips or chopped dried fruit (optional)

Instructions:

  1. Add peanut butter to a large microwave-safe bowl and melt peanut butter on medium setting until just melted.
  2. Add the rest of the ingredients and stir to combine.
  3. Add the mixture to a parchment lined 9×9 pan and press evenly to the edges.
  4. Cook in a preheated 350° oven for 25 – 30 minutes until golden brown. Let cool and cut into 12 bars.

Tip: Let cool in the fridge for easier slicing. Store leftovers in an airtight container and can be stored in the freezer.
