While grilled chicken is an excellent choice, it sometimes gets boring and there are other places we can find protein! Tuna and garbanzo beans (chickpeas) are both good sources of protein and are delicious and versatile!

Servings: 6

1 15 oz. can low sodium chickpeas, drained and rinsed

2 5 oz. cans chunk light tuna canned in water, drained

1 red bell pepper, diced

½ cup red onion, finely chopped

½ cup fresh parsley, divided

2 Tbsp capers, rinsed

1½ tsp fresh rosemary, chopped

½ cup lemon juice, divided

4 tsp olive oil, divided

8 cups mixed greens

Salt and pepper to taste

  1. Combine chick peas, tuna, red pepper, onion, parsley, capers, ¼ cup lemon juice, and 2 tsp olive oil in a bowl. Season with black pepper to taste.
  2. In a separate bowl, combine the remaining ¼ cup lemon juice and 2 tsp olive oil and season with salt and pepper to taste. Add mixed greens and toss to coat.
  3. Divide greens among 6 plates, about 1.5 cups each. Top each plate with ¼ of the tuna mixture.
