Here is an easy way to have a super simple tasty summer salad.  Try grilling your lettuce.

You’ll love the charred smoky flavor it adds to salad.

Makes 4 servings

  • 2 Heads of hearts of Romaine lettuce
  • ½ avocado
  • 4 tbsps.  buttermilk
  • 1 tbs. lemon or lime juice
  • 2 tsps. Olive oil divided
  • ½ tsp. salt
  • ½ tsp. ground fresh pepper
  • 1 cup heirloom cherry tomatoes
  • ½ small red onion; sliced or chopped
  1. Cut the lettuce in half vertically leaving the root attached.  Brush with 1 teaspoon of the olive oil.  Grill cut side down on medium low heat until slightly charred approximately 2-3 minutes.
  2. Meanwhile slice the tomatoes and set aside.
  3. In a food processor or blender puree the avocado, buttermilk, lemon or lime juice and salt and pepper.
  4. Top each ½ of grilled lettuce with tomatoes and red onion and drizzle with avocado buttermilk dressing.
